Filling:
2 Tbl. butter
5 medium apples, peeled, cored and sliced
1/2 cup sugar
1 Tbl. flour
1/2 tsp. cinnamon
1/8 tsp. nutmeg, optional
1/8 tsp. saltTopping:
1 cup all-purpose flour
1/4 tsp. baking powder
1/2 cup butter, preferably unsalted, at room temperature
1/2 cup sugar
1 egg yolk
1/4 tsp. vanilla
1/2 cup toasted almonds or pecans, optionalFilling:
Grease a 9-inch square pan with butter. Peel, quarter and core the apples. Slice them about 1/4-inch thick. Mix sugar, flour, cinnamon, nutmeg, and salt. Put a layer of apples in the dish, sprinkle with sugar, continue to alternate layers.Heat oven to 375 degrees.
Topping:
Combine flour, baking powder and salt and set aside. Beat butter and sugar together until well-mixed. Beat in egg yolk and vanilla. Stir in the flour. The mixture will be very soft.Lightly flour a piece of wax paper and the outside of a rolling pin. Place the dough on the paper. Gently and quickly roll the dough to about the dimensions of the baking dish. This will only take a few quick rolls. Turn the wax paper over to release the dough on top of the apples, and poke the dough if you need to to make the edges fit. The dough will spread and form to the apples.
If you're using almonds or pecans, sprinkle them on top of the dough. Bake the cobbler 45 minutes.Serves 8.
