Beef Stew

3 lbs. lean beef, round or rump 
2 Tbls. vegetable oil 
1/2 tsp. salt 
1/2 tsp. onion salt 
1/2 tsp. celery salt 
1/2 tsp. minced garlic
1 tsp. dried parsley 
1 bay leaf 
1 pinch thyme 
6 small whole carrots 
3 large potatoes, quartered 
1 large onion, quartered 

Cut meat into small pieces. Brown in oil. Add seasonings and enough water to cover. Simmer, covered, about 2 hours. Add vegetables and simmer until vegetables are tender--about 30 minutes. 

Serves 6.
