Beef Teriyaki

3 Tbl. soy sauce
3 Tbl. dry sherry
1 1/2 Tbl. sugar
4 cloves garlic, minced
6 thin slices fresh ginger, smashed
1/4 tsp. freshly ground black pepper, or to taste
1 1/2 lb. flank steak

In a small bowl, mix together the soy sauce, sherry, sugar, garlic, ginger, and pepper.  In a shallow pan, combine the steak and the sauce.  Cover and refrigerate overnight.

Preheat the broiler.

Broil the steak, turning once, until medium-rare, 3 to 4 minutes per side.  Slice across the grain.

Serves 4.
