Beef Hash

1 c. cooked lean beef
1 c. peeled, cubed potato
1/2 c. chopped onion
1 Tbl. chopped fresh parsley
1/4 tsp. salt
1/4 tsp. pepper
2 tsp. vegetable oil
1/8 c. milk

Combine first 6 ingredients.

Cook in hot oil in a large skillet over medium-high heat for 10 minutes or until browned and potatoes are tender, stirring occasionally.  Stir in milk; cover, reduce heat, and simmer 5 minutes.

Serves 2
