1/3 cup vegetable oil
1 1/2 cups sugar
1 1/2 teaspoons vanilla
1 egg
2 egg whites
1 2/3 cups flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup powdered (confectioner's) sugarPreheat oven to 350 degrees. Place sheets of foil on countertop for cooling cookies.
Combine oil, sugar, and vanilla in a large bowl. Beat until blended. Add egg and whites; beat until blended. Stir in flour, cocoa, baking powder and salt with a spoon.
Place powdered sugar in a shallow bowl.
Shape dough into 1" balls. Roll in powdered sugar until coated and place 2" apart in ungreased cookie sheet.
Bake at 350 degrees for 7 to 8 minutes. (Will still be slightly soft.) Cool on baking sheet for 2 minutes then remove to foil to cool completely.
Makes 4 dozen.
