Chocolate Peanut Butter Cup Cookies

1 cup semisweet chocolate chips
2 squares unsweetened chocolate
1 cup sugar
1/2 cup butter or butter flavored Crisco
2 eggs
1 tsp. salt
1 tsp. vanilla
1 1/2 cups plus 2 Tbls. flour
1/2 tsp. baking soda
36 mini peanut butter cups, unwrapped

Melt together 1 cup chocolate chips and unsweetened chocolate squares.  (Melt on medium power in microwave for 2 minutes, stir.  Repeat until smooth.)

In a mixing bowl, combine sugar and butter.  Beat in the eggs, salt, and vanilla.  Add chocolate mixture; mix until well blended.  Stir in flour and baking soda.

Shape dough into 1 1/4" balls.  Place 2" apart on ungreased cookie sheet.

Bake at 350 degrees for 8 to 10 minutes.  Do not overbake.  Remove from oven and press one peanut butter cup into the center of each cookie.  Cool for 2 minutes on cookie sheet, then remove to racks to continue cooling.

Makes 3 dozen
