Citrus Sorbet

1 cup sugar
1 cup water
1 tsp. lemon, lime OR orange zest
4 lemons, limes OR oranges

Combine sugar and water in a small saucepan over high heat.  Stir and cook until the sugar dissolves.  Bring to a boil and let boil for one minute without stirring.  Remove from heat and set aside.

Using a very fine grater, grate zest until you have one teaspoon.  Set aside.

Squeeze the juice from the 4 lemons, limes, or oranges into a 4-cup glass measuring cup.  (Strain out seeds.)  Stir in sugar syrup and zest.  Add enough water to make 3 1/2 cups total liquid.  Stir well.  Refrigerate until well chilled, about one hour.

Transfer liquid to an ice cream maker and freeze according to manufacturer's instructions.  When it is frozen, remove from ice cream maker and place in covered container for at least one hour.

Makes 1 quart.
