Flan

1/2 cup sugar
1 (14-oz.) can sweetened condensed milk
1 cup milk
3 eggs
3 egg yolks
1 tsp. vanilla extract
1/2 tsp. almond extract

Sprinkle sugar evenly in a heavy saucepan; place over medium heat.  Cook, stirring constantly, until sugar melts and syrup is a light golden brown.  Pour hot caramel mixture into a 9" quiche dish, tilting to coat bottom; set dish aside.

Combine remaining ingredients in blender or food processor.  Process at high speed for 10 seconds.  Pour mixture into quiche dish.  Place dish in a 14" x 11 1/2" x 2 1/4" dish.  Pour 1" of hot water into a larger dish.  Bake at 325 degrees for 40 minutes or until a knife inserted in center comes out clean.  Remove flan from water; cool.  Refrigerate overnight.

Loosen edges with a spatula; quickly invert flan onto serving plate.

6 to 8 servings
