Honey Wheat Bread

1 1/2 cups water
1/2 cup honey
1 cup cream-style cottage cheese
1/2 cup butter
1 egg, beaten
2 pkg. yeast
2 Tbl. sugar
2 tsp. salt
5 1/2 to 6 cups flour, divided
1 cup whole wheat flour

Combine water, honey, cottage cheese, and butter in a small saucepan; heat until very warm (120 to 130 degrees).

Combine egg, yeast, sugar, and salt in a large mixing bowl, mixing well.  Add cottage cheese mixture, 3 cups flour and the cup of whole wheat flour.  Beat at medium speed for two minutes.  Gradually stir in enough of the remaining flour to make a soft dough.  Turn dough out onto a well-floured surface, knead about five minutes until smooth and elastic.  Place in a well greased bowl, turning to grease top.  Cover and let rise in a warm place for an hour.

Punch dough down; let rest five minutes.  Divide dough in half; shape each half into 18 (2") balls or one loaf.  Arrange rolls 3" apart on greased baking sheets or place loaf in a greased 9" x 5" x 3" loaf pan.  Cover and let rise in a warm place for an hour or until doubled in bulk.

Bake rolls at 350 degrees for 20 minutes.  Bake loaf at 350 degrees for 45 minutes or until loaf sounds hollow when tapped.  Remove loaf from pan, cool on wire rack.

3 dozen rolls or one loaf
