Lemon Bars
2 lemons
2 cups flour
1 cup butter
1/2 cup powdered sugar
1/4 tsp. salt
1 cup sugar
3 large eggs
1/3 cup fresh lemon juice
sifted powdered sugarFinely grate zest (colored part) of lemon peel. Measure 4 teaspoons of zest and set aside.
Preheat oven to 350 degrees. Grease 13" x 9" baking pan, set aside. Place 1 teaspoon lemon zest, flour, butter, powdered sugar, and salt in mixer or food processor. Mix until it forms coarse crumbs.
Press mixture evenly into prepared baking pan. Bake 18 to 20 minutes or until golden brown.
Beat remaining 3 teaspoons lemon zest, granulated sugar, eggs, and lemon juice until well blended.
Pour mixture evenly over warm crust, return to oven and bake 18 to 20 minutes more. Center should be set and edges golden brown. Remove pan to wire rack to cool.
Dust with sifted powdered sugar, cut into bars.
Store tightly covered at room temperature.
Makes 3 dozen.
