Oatmeal Cookies

2 sticks (1/2 pound) unsalted butter, softened
1 cup light brown sugar
1 cup granulated sugar
2 eggs
1 1/2 cups flour
1/2 tsp. salt
1/2 tsp. baking powder
1/4 tsp. nutmeg
3 cups rolled oats

Preheat oven to 350 degrees.

In bowl, beat butter until creamy, add sugars and continue to beat for about 3 minutes. Beat in eggs one at a time.

Mix flour, salt, baking powder, and nutmeg. Stir into butter mixture. Stir in oatmeal.

Form dough into 2-inch balls (16 - 20). Place dough balls onto two parchment covered cookie sheets.

Bake for 22 to 25 minutes.

Let cookies cool on wire racks for 30 minutes before serving.
