Pumpkin Bars
2 cups sugar
1/2 cup vegetable oil
1 can (16-oz.) pumpkin
4 eggs
2 cups baking mix (Bisquick)
2 tsps. ground cinnamon
1 can cream cheese frosting (2 cans if you like the frosting thick)In an electric mixer, beat together sugar, oil, pumpkin, and eggs. Stir in baking mix and cinnamon. Pour into a greased 15" x 10 1/2" x 1" jelly roll pan (you can also line the bottom of the pan with parchment paper.)
Bake at 350 degrees for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
Cool. Frost with cream cheese frosting and cut into bars.
