Pumpkin Bread

This keeps well and is even better after a day or two, so it is great to make as a gift.

3 1/2 c. flour            
2 t. baking soda          
1 t. cinnamon            
1/2 t. ginger             
1 c. oil                  
4 eggs

3 c. sugar
1 1/2 t. salt
1 t. nutmeg
16 oz. can pumpkin
2/3 c. water

Preheat oven to 350 degrees.  Grease and flour bottoms of two 9"x5" or 8"x4" loaf pans.

Combine all ingredients in a mixing bowl.  Blend at low speed until moistened; beat 3 minutes at medium speed.  Pour into pans.  Bake 1 to 1 1/2 hours until toothpick inserted in center comes out clean.

Cool 5 minutes; remove from pans.  Cool completely.  Wrap tightly to store.
