steamed carrotsPlace roast, fat side up, on a rack in a shallow roasting pan.
Bake at 350 degrees for 2 hours or until meat thermometer registers 145 degrees (medium-rare). Let stand 10 minutes before slicing. Serve with potatoes and carrots.
Serves 8 - 10.
