Rice Pudding

3 cups water
1/2 cup uncooked long grain rice
1 (3") stick cinnamon or 1/4 tsp. ground cinnamon
1 (1/2" wide) pieces lemon rind
dash salt
1 (14 oz.) can sweetened condensed milk
ground cinnamon

In a medium-sized pan, combine water, rice, stick cinnamon or 1/4 tsp. ground cinnamon, lemon rind, and salt.  Let mixture stand 30 minutes.

Bring mixture to a boil, stirring occasionally.  Add condensed milk, mix well.  Return to a boil; stir.

Reduce heat to medium.  cook, uncovered, stirring frequently, 25 to 30 minutes or until most of the liquid is absorbed.

Cool (it will thicken).  Remove cinnamon stick and lemon rind.  Sprinkle with ground cinnamon.  Serve warm or chilled.

Makes 4 - 6 servings.
