Batter Rolls

3 1/4 c. flour
1 pkg. dry yeast
1 1/4 c. milk
1/2 c. shortening
1/4 c. sugar
1 egg

In large mixing bowl, combine 2 cups of flour and the yeast.  Heat milk, shortening, sugar, and 1 teaspoon salt till warm (115 - 120 degrees).  Add milk mixture to mixing bowl, mix, add egg (we use egg substitute because the kids like to eat the dough and we don't want to worry about salmonella.)

Beat at low speed with mixer until moistened then beat at high speed for 3 minutes.  At low speed, beat in remaining flour.  Beat until smooth.

Cover with plastic wrap and let rise for about an hour (until doubled in size).  Stir down and spoon into greased muffin pans.  Cover again and let rise for about half an hour.  Bake at 400 degrees for 12 to 15 minutes.  Makes 20.
